Twice as much unsalted butter
One large onion, diced finely
Two big potatoes, chopped and skinned
One sliced red bell pepper
One chopped green bell pepper
Two minced garlic cloves
A single tsp of dried thyme
To taste, add salt and black pepper.
Four large eggs (to serve, if desired)
Chopped fresh parsley (for garnish)
